Summer Peach Cake

My mom and I baked this fresh peach cake over the weekend with some of the peaches we picked up from the farmers market. When it gets super hot outside, baking isn't exactly top on my list of fun things to do. It's still a little early in our Texas summer (I'm pretty sure we haven't had a 100 degree day yet! Shocking!) so I thought it would be fun to take advantage of the cooler, 90 degree weather (HA!) and fresh, local produce by whipping up something yummy. Baking is definitely one of my favorite things to do. We all know I love knitting and what not, but there is something so relaxing about mixing together flour, sugar, and eggs. Apparently, I need a few more baking days because I just haven't been feeling myself lately. I'm in a weird funk, similar to what I experienced my first few weeks of college. I definitely do not want to go back and experience that again. I guess I just need some more time to adjust to the changes in my life. Baking should fix all of those feelings, right? More baking and knitting. That's the cure.

This cake is so fluffy and light, with the consistency of a coffee cake. I definitely recommend it for any summer gatherings you have planned over the next few months! Maybe your dad likes peaches and you could make him one for Father's Day? My dad is more of a chocolate man, but he didn't have any trouble eating a piece (or two!) of this cake. ;)

What are your favorite things to bake in the summer? Any favorite pie recipes for the Fourth of July? Cobblers are fun to make this time of year too!


P.S. - I drove by my strawberry yarn bomb today and it is STILL there! Yay! This is the longest one of my yarn bombs has survived. I guess the strawberry won over even the toughest yarn bomb critic.

  1. Oh my goodness, that cake looks divine... yum. My favorite summer recipe is strawberry-rhubarb over fresh home-made biscuits! Although I also love chocolate cream pie topped with raspberries from out garden. Mmm.

    Yay for the survival of the yarn-bombing! That's so exciting. Heehee, nobody wants to be the grump who takes down a knitted strawberry. Hope you're having a lovely afternoon!

  3. Oh my, that looks tasty. I'm sure if there's any way to get out of a funk, peach cake is the way to do it! I try not to turn the oven on during the summer, but I love making fruit popsicles!

  4. That's a great idea for a cake! I want to try making blueberry buckle when my husband comes to visit for the fourth of July week.
    I might try this type of recipe on a cupcake - I'm not a fan of frosting usually, so peaches would be a great substitute.

  12. Graduating hit me pretty hard. Especially because I had to leave NYC - a place I had come to love. All my friends were scattered over the country, too. I was so down that my mom thought I should adopt a kitten (my cat of 13 years had died when I was a sophomore in college). Since when do parents say "sure, go ahead, get a pet"!? I did and now Fiona is 5 and still makes me smile every day. Having something to take my mind off of the transition really helped. If baking does that for you, go for it!

  13. Looks lovely! As relazing as knitting and crochet is, I find baking to be extremely calming - there's stopping and checking emails while you do it, just you, the ingredients and the recipe. I hope you feel better soon, Meredith!
